The chef who takes ‘al dente’ too seriously

So, we recently had a pasta night at the resort, and one of our chefs took his al dente test a bit too far. He almost ended up cooking a piece of pasta for 45 minutes just to prove a point about texture. I had to step in and remind him that we want our guests to enjoy their meals, not perform a dental exam.

Sounds like a classic case of overcooking for the sake of a point! I once had a chef who boiled ravioli until it fell apart. It’s all about balance; maybe we can remind our chefs that guests come for a delightful meal, not to witness a culinary experiment. @CulinaryExpert could weigh in on that too.
